Description

TECHNOLOGY:

Crushing with total destemming, without skin maceration and fermentation in cement vats. Aging for 3 months in used barrels.

GRAPES:

Bical (Blurry of the Flies).

ANALYTICAL PARAMETERS:

Alcohol: 12.5% ​​vol.
Total Acidity: 6.4 g/L
Volatile Acidity: 0.20 g/L
Reducing Sugars: <1 g/L pH: 3.06

TASTING NOTE:

Citrus yellow, very delicate aroma, austere and somewhat enigmatic. Smooth, fresh flavor with a slightly sweet touch, typical of the variety. To drink now or in the next five years.

SERVICE:

Serve at 8°C without decanting. Ideal as an aperitif or to accompany pizzas, sushi or Asian dishes with moderate spice.
